Hydroponically Grown Evergreen Scallion Pancakes Recipe

These savory pancakes are a popular Asian snack, crispy on the outside with layers of flavorful scallions on the inside. Ingredients:
- All-purpose Flour: 2 cups
- Boiling Water: 1 cup
- Hydroponically Grown Evergreen Scallions: 1 cup, finely chopped
- Sesame Oil: 4 tablespoons
- Salt: 1 teaspoon
- Vegetable Oil: For pan-frying
- Dipping Sauce (optional):
- Soy Sauce: 3 tablespoons
- Rice Vinegar: 1 tablespoon
- Sesame Oil: 1 teaspoon
- Red Pepper Flakes: A pinch
Instructions:
- Dough Preparation: In a large mixing bowl, pour boiling water into the flour, stirring continuously with a spoon. Once cool enough to handle, knead the mixture into a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.
- Dough Division: Divide the rested dough into 4 equal portions. Roll each portion into a ball.
- Rolling Out: On a floured surface, roll one dough ball into a thin circle.
- Scallion Layer: Brush a thin layer of sesame oil over the top of the rolled-out dough. Sprinkle with a pinch of salt and one-quarter of the hydroponically grown Evergreen Scallions.
- Rolling Up: Roll the dough tightly from one end to the other, forming a long cylinder. Then, coil this cylinder into a spiral shape, tucking the end underneath.
- Flattening: Using a rolling pin, gently flatten the coiled dough spiral into a pancake, ensuring the scallions are well-distributed.
- Pan-Frying: Heat vegetable oil in a skillet over medium heat. Once hot, place the scallion pancake in the skillet. Cook for 2-3 minutes on each side or until golden brown and crispy. Remove and place on paper towels to drain excess oil. Repeat for the remaining pancakes.
