Creamy Cutting Celery Soup Recipe
Ingredients:
- 1 bunch of hydroponically grown cutting celery
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 3 cups vegetable broth
- 1 cup potatoes, diced
- 1/2 cup heavy cream

Instructions:

- Wash the cutting celery thoroughly under cold running water. Separate the leaves from the stems. Chop the stems finely and set aside. Coarsely chop the leaves and set them aside separately.
- Heat the olive oil in a large soup pot over medium heat.
- Add the finely chopped onion and minced garlic to the pot. Sauté them until the onion becomes translucent, stirring occasionally, for about 5 minutes.
- Add the chopped cutting celery stems to the pot and continue to cook for an additional 2-3 minutes, allowing them to soften.
